The trainer in Damas will only train Hand to Hand, the weapon merchant next to him will sell you a right and left handed weapon.

When you try to equip them it says I do not have Dual Wield. Do any classes besides rogues get dual wield and if so can druids train in it? It would go well with our animal forms.

Yep
Rogues at 10
Hunters and Warriors at 20

No one else can dual wield, limited to "Held in Hand" items for offhand, or shield. There is no shield trainer either, if you can use a shield, you start with the ability to.

I have also found that if you use a fishing pole as a weapon the usage skill is based on your fishing ability... But they do make good weapons up till about lv 15.

You must look very dangerous..running through the forest 'hooking' a bear by the ear then beating him with your pole!

Probably better off using a Dwarven Fishing Pole (http://www.thottbot.com/?i=987) =P

Is there any benefit in training in hand to hand.
Does this increase your ability to fight in animal forms?

I haev always wondered this, but never actually tried it

Anyone have any idea?

The benefit is being able to "fight" while disarmed. Or for kicks.

You can fight without a weapon from the start and gain skill or whatever, the only thing that training fist weapons does is allow you to use one of the silly and rare fist weapons, uh, the only ones I've seen were the ones on that vendor in Darnassus right next to the trainer, and the dps on them is pure suck :(

I got Bloody Brass Knuckles (http://www.thottbot.com/?i=9489) as a drop in SM, still carry em for who knows what reason...
