I've been making some of the GM armor now and I was wondering if anyone knows weather or not the GM helm has a graphic. Not really wanting to waste the 3 hides (2 for the helm and 1 for the symbol) to make one if it does.

I'd make a masters helm with no symbol. Put it on, see what it looks like and "assume" all cultural has the same look for your race.

since all three previous helmets (journeyman, expert, master) have leather look, the probability is high that the GM one has leather looks too
